Around July 4th, you're supposed to inhale copious amounts of BBQ. Well mine has arrived in the form of pizzaaaaaa! Yes we're at it again - another pizza cooking adventure! This time a riff off of California Pizza Kitchen's world famous BBQ Chicken Pizza. (Who doesn't love this CPK treasure?!?!) I've been eating it for as long as I can remember. Lucky for me B is a big fan of it too. </div>

Anyways this was such an easy meal to whip up especially since I had a treasured Trader Joe's pizza dough in the freezer. (Note it comes refrigerated but I bought a few during my last visit for the sole purpose of freezing to see how they freeze. Still perfect after a defrost!) We made this pizza without a real amount of cheese but you can easily add that in. B wanted a little bit of cheese so our compromise was to sprinkle Parmesan cheese on top once it was baked. The BBQ sauce, caramelized onions and chicken really have a lot of flavor so the traditional amount of cheese was not missed. Try it out today!</div>

Two of my favorite vegetables - kale and brussels sprouts - wrapped into an easy to make salad. Win. Win. Well hellooooo! I might just get back to blogging after a nearly four year hiatus. The reason...this pizza! Hot damn this <a href="http://www.thissavoryvegan.com/vegan-roasted-cauliflower-buffalo-pizza/?utm_campaign=shareaholic&utm_medium=email_this&utm_source=email" rel="noopener" target="_blank">Roasted Buffalo Cauliflower Pizza</a> (by the Savory Vegan) was one of the most delicious pizza I have ever made! (And I've made a lot of pizzas in my time).<br />
<br />
We came to this pizza because B and I both love our veggies. We substitute veggies in place of meat in a lot of recipes. (But don't get me wrong I love a good steak and burger!) We also love pizza, but since I try to avoid dairy 98% of the time, I'm always looking for a good pizza without cheese. (Clearly I am in the camp that the best part about pizza is the crust and not the cheese...<em>mmmmm bread, I love bread.</em>) This buffalo cauliflower pizza hit the spot and B even remarked, "I don't miss the cheese!" We inhaled this pizza and already discussed other variations. Next up, Buffalo Chicken Pizza (the same as above but with chicken) and riffs on the California Pizza Kitchen BBQ Chicken Pizza (one with chicken and one with cauliflower!)<br />

p.s. I think my best move here was using Trader Joe's pizza dough - so much quicker than making my own from scratch.<br />

We booked the trip tow weeks before on <a href="http://cheapcaribbean.com/">CheapCaribbean.com</a> - an all-inclusive deal to <a href="http://www.atlantisbahamas.com/" target="_blank">The Atlantis</a> resort. One of us (I'm not naming any names, but it wasn't me!), had never been to the Caribbean. Say what?! He's visited and lived in countless countries around the world, but has never gone on a proper beach vacation.<br />

So the Atlantis was an excellent vacation choice for us! It was the perfect time to go - right between all of the crazy crowds descended on the resort. We completely checked out, turned off our phones, refused to watch any cable news shows, laid on the beach, went to the spa every day and ate a lot! Since I barely took my phone out of the room, my pictures are limited, but here are a few highlights of the resort.<br />

Today's dish is a simple, rich, creamy and decadently delicious tagliatelle pasta courtesy of Ina Garten aka the Barefoot Contessa aka my idol. After all she quit her life in DC, moved to a fabulous place and created a cooking empire. Understandably, I jumped at the opportunity to hear Ina speak about her new cookbook, <a href="http://www.barefootcontessa.com/cookbooks_details.aspx?CookbookID=33" target="_blank"><i>Foolproof</i></a>, right before the holidays. Like all of her other cookbooks, its well written and explains the best ways to get food to the table at the same time, and without error; and suggestions on her preferred cooking items, from appliance and tools to canned tomatoes and salts. </div>

This dish is exactly what I was looking for the other night - it was simple, I had all the ingredients already and allowed me to use that bunch of broccoli purchased earlier in the week. I went to my second trapeze class on Thursday night and I was not, I repeat NOT, looking forward to it. In fact, the days leading up to it, I kept thinking "I can conveniently trip over this sidewalk or my dog and slightly injure myself!" and "I hope I wake up nauseous and puking on Thursday!" because surely my friends and the instructors wouldn't let me climb that 20+ foot ladder and jump off a platform countless times in either condition!<br />

But alas, I didn't come down with an injury or the flu, so my friend Sallyann, who already did a great <a href="https://mileoneandcounting.wordpress.com/2012/12/14/trapeze-take-2/">blog post</a> on our experience, and I trekked out of the office into the cold and made our way over to the <a href="http://washingtondc.trapezeschool.com/">Trapeze School of New York</a>. The school is a cool circus like place - we walked into find people on trampolines, dangling and twisting from silks, juggling and of course flying, courtesy of the trapeze.<br />
<br />
During my first climb up that very high ladder, I was terrified yet knew there was no turning back. Why? Its better to get over it and push yourself through the uncomfortable, terrifying things in life, right?! The class was a blur and full of laughter but to sum it up, I was stoked that on my first jump, I managed to pull off the upside down hang that I slowly started to learn at the end of my first class. I nailed that move each time, attempted some backflips off the bar and tried to do a catch with the instructor...which I missed his arms by a hair! Better luck next time.<br />

Check out the video Sallyann took to prove we really might be crazy. The question is will I brave it again and go for my 3rd class? One thing is for sure, its quite the workout - my arms, legs and abs are still sore.<br />

The holidays are a perfect time to indulge so instead of going crazy from Thanksgiving to Christmas, I figured I should space out the overindulgence! So post Thanksgiving, to balance out all the desserts, drinks, fried foods and whatever else makes holidays awesome, I started a smoothie "cleanse." There are no directions, no steps really - just homemade smoothies for 2 meals and a sensible 3rd meal for a # of days. ( I lasted about 4 days!) This time of year should be all about moderation, but lets be honest, its way too easy to give in and enjoy the holidays to the fullest extent! My solution - find some fun yet somewhat healthier options. A variety of colorful, fresh vegetables char grilled served with some cheesy bread. If you need the protein, cook up some chicken, seafood or steak. The original recipe called for grilled flatbread but since I had none, I made my own grilled cheesy toast - ciabatta sliced up with olive oil, garlic and mozzarella and Parmesan cheese.</span><br>

I flagged this recipe simply because it involved harissa. For those of you that have not yet experienced the joy that is <a href="http://www.cavamezze.com/">Cava Mezze</a>, I am sorry you've been deprived that #greekygoodness. Once you sit down, the Cava waiters bring over a little sampling of dips, including the <a href="http://cavafoods.com/products/harissa">harissa</a> - a spicy combination of tomatoes, peppers and olive oil that can't be beat. I often find myself contemplating when or how to get my next fix of this stuff. So fast forward to the July issue of Bon Appetit - all I needed was fresh green beans (and I got those when I went to the <a href="http://ntidwelltestkitchen.blogspot.com/2012/10/pick-your-own-adventure-hollin-farms.html">pick your own farm</a>) to get me to my next harissa fix!<br>

Verdict - while this recipe was awesomely spicy, I still need to work on perfecting it. Or maybe this will be my homefix and I can go to Cava whenever I need other #greekygoodness! Either way this harissa will be great on grilled vegetables, meat or seafood and of course with pita.<br>

<span style="font-family: inherit;">Ever make something and instantly think <i>YESSS, this is definitely going in the rotation? </i>Salmon is one of my go to seafood items and I've pan seared it or baked it a zillion different ways a zillion times for the sake of variety. Today's recipe though is now <u><i>filed under one of my favorite</i></u> salmon dishes, simply because of the pumpkin seed-cilantro pesto. </span><span style="font-family: inherit;">This pesto is <b>awesomeness redefined</b> - so simple, so different and so versatile. I'm confident it will be great with roasted vegetables, chicken and pasta. There's really not much to say here...its October and its almost Halloween...so that means get your pumpkin fix in. I blame the delicious sounding, and allegedly delicious tasting, Pumpkin Spice Lattes from Starbucks that coworkers and friends rave about this time of year, for forcing me to find other ways to get that pumpkin fix since I don't drink coffee. The solution was one that benefits everyone benefits - pumpkin chocolate chip cookies! Anything with chocolate is essentially a WIN in my book but these cookies <i>I swear are healthy</i> (....OK, healthier) - thanks to the use of dark chocolate and whole wheat flour. A few of my coworkers decided the cookies were more cake-like so they would be perfect for whoppie pies filled with a cream cheese frosting. Yep, I will likely make those around Thanksgiving, for the last pumpkin hurrah!<br>

I wish I had made this awesome pasta for dinner Saturday night in prep for the <a href="http://www.armytenmiler.com/" target="_blank"><b>Army 10 Miler</b></a> yesterday (I have no idea what the best thing to eat before a long race, so I just eat whatever I want...hence the <a href="http://ntidwelltestkitchen.blogspot.com/2012/10/pick-your-own-adventure-hollin-farms.html" target="_blank">massive ice cream cone</a> in my last post!) This is the second year I've run the but the umpteenth time I've watched the race. 30,000+ runners running to raise awareness and funds for the Army is definitely one of the most inspiring races to watch and participate in - from the high volumes of people running in honor of someone to the wounded warriors to all the Army folks handing out water and gatorade, its pretty awesome...and very DC. The gorgeous weather was also a huge plus. I left my phone, ipod and watch at home so no clue how fast (or slow) I was running so I was happy to see my final time of 1 hour and 28 minutes...a whole 4 minutes faster than last year! I think the ice cream the day before was my lucky charm...<br>

But back to the pasta, this dish is so easy to make. Great for a crowd or for a bunch of smaller lunches/dinners. While I made this a few weeks ago, this is going into the rotation for the next dinner I host thanks to the ease in directions that results in yum!<br>

My new favorite trek outside of D.C is a scenic hour or so drive that ends in an amazing pick your own farm - <b><a href="http://www.hollinfarms.com/" target="_blank">Hollin Farm</a></b> in Delaplane, VA. I only discovered this place last month after my friend Amy and I stumbled upon it after a failed attempt to visit another farm. Not wanting to drive back to the city, we started exploring and totally lucked out. If you like knowing where your food comes from - a pick your own farm like this is awesome! Acres and acres of vegetables and fruit at incredibly cheap prices compared to a grocery store.<br>

<span style="line-height: 19px;"><span style="font-family: inherit; line-height: normal;">While my work neighborhood has some great restaurants, <i>who</i> really has time to have a long drawn out sit down lunch? Not I! So I'm always looking for an easy lunch to take with me so I don't have to think about what to eat to fuel me through the day. Since its still somewhat warm out, I settled on this recipe because it looked super easy and was something different and light. Verdict? So easy to make, so colorful and full of texture. I love Sriracha so I added more than the recipe called for and didn't add the cilantro because I forgot to purchase it. Next time, I will add chicken or tofu to give it more of a protein punch. This dish is perfect for a light lunch or dinner, especially during the warm months.</span></span><br>

I have dozens and dozens of recipes clipped in folders, tagged in cookbooks/magazines and even a recipe tag in my email. I love recipes and I love testing them out. So after a friend and I stumbled upon a "pick your own" farm a few weeks back, I had alot of tomatoes and zucchini to experiment with. Off to the recipe reserves I went and selected a fancy looking zucchini, tomato and ricotta tart. I'd always wanted to make it but feared promising it for a weekend brunch in the event it was an epic fail! I was pleasantly surprised that this recipe was simpler than I thought (heck, I made it after I had completed a 7.5 mile run one Sunday morning so you know it had to be non-intense!). The end result was delicious....I was glad I was the taste tester for this one as I wanted it all for myself!</span></div>

I honestly triple love butternut squash because its so darn delicious and easy to make! Plus it's healthy - i'm talking healthy carboydrates, vitamins A and C and potassium! Aside from that, it can go in a variety of dishes - it can be roasted, toasted, pureed into soup or mashed into casseroles, muffins and breads.<br>

Seeing that I am on my two week work trip and not cooking, here is one of my go to basic recipes for a quick, healthy and delicious side dish, meal or snack - roasted butternut squash! Since my discovery of the peeled and cut butternut squash at Trader Joe's this has become more of an essential item in my weekly grocery list.<br>

words delicious peanut butter milk chocolate pudding. (Granted I purposely put
this recipe on top of my recipe folder so she would see it first and want it

peanut butter cup</a></span><span style="background-color: white; color: black;"> – only 1 million times better. Be sure to use good, creamy,
all-natural peanut butter – it will give the best flavor. Now that I am posting
this, I want it right now and will likely dream about it! This is a must try
