According to my research on the Net, kale is one of the healthiest vegetables around. I had no idea what kale was before, I just ate it because I liked it! So a little background, kale is a form of wild cabbage in the same family as spring greens and collard greens. Kale is a nutritional powerhouse: its packed with vitamins A and C and is a great source of beta-carotene. So last week in the interest of eating more kale, I picked up a bag of chopped kale at Trader Joe's. Of course I didn't think to use it until the night before I went out of town for several days and since I didn't want to waste it, I decided to make baked kale chips as a low calorie and nutritious side dish. Much like potato chips, I couldn't eat just one. But since it was vitamin packed and healthy, I didn't care!
Ingredients:
- kale (1 bag, chopped)
- olive oil (1-2 tablespoons)
- kosher salt (1 teaspoon)
Directions:
Preheat the oven to 350 degrees. Wash and thoroughly dry kale. Place on a baking sheet. Drizzle kale with olive oil and salt. Bake until the edges brown but are not burnt, about 10 to 15 minutes.

I really don't like Kale but this might be a way for me to trick myself into eating it. Can't you find a way to make Kale taste like chocolate?
