Stuffed Peppers

The funny thing is I see Stoffers stuffed peppers all the time in the frozen food aisle and my thoughts are usually, ewww! But I saw this recipe and thought it's got to be good, easy and healthy so why not give the stuffed peppers a chance. Especially when I realized there are a lot of other good stuffed foods in the world like stuffed mushrooms or dolmas or jalapeno poppers or chile rellenos to name a few. So here we go again. Another recipe from The Food You Crave, but somewhat doctored based on what I had in the fridge.

What you need: lean ground beef or turkey (1lb), fresh spinach (10oz), zucchini (1), small red onion, egg (1), red bell peppers, stewed tomatoes (14.5oz can), feta cheese.

Preheat the oven to 350. Grate the zucchini and onion. Finely chop the spinach. In a large bowl combine, ground meat, spinach, zucchini, onion, egg, salt and pepper. Arrange the pepper halves in a baking dish. Fill each pepper with the meat mixture.

Then pour the tomatoes with their juices over the peppers and sprinkle with feta.
Cover with foil and bake for 30 minutes. Uncover and bake for another 45 minutes.
Verdict: Good, but next time could use some more flavor, namely salt. It's very healthy tasting, probably because of the turkey meat, which I guess isn't a bad thing. Sure if you used beef it would be a little less health-intense!
