Chessy Potatoes

Cheesy potatoes - if you have ever had them, words cannot describe the joy they bring! Seriously, if you've never had them make this recipe or have someone else make it for you. It's one of those recipes that's been in my family for ages and it goes with almost everything. Its also a supper club staple, hence why I made it this week! While it's not the most healthy thing, I've tried to make a low-fat version and it does not taste as good. So embrace the calories, enjoy this dish and then just hit the gym, spinning or kickboxing a little bit longer than normal to make up for it!

Ingredients:
tater tots (2lb bag)
butter (1 stick, cut up into pieces)
onion (1/4 cup, chopped)
sour cream (1 pint)
cream of chicken or mushroom (1 can)
shredded cheddar cheese (2 cups)
salt and pepper (usually just shake some in there for flavor purposes)
potato chips (optional for topping)
Heat oven to 350 and grease a 9x13 baking dish with butter.

Combine tater tots, onion, sour cream, cream of chicken and shredded cheddar cheese. Add about 1/3 of the butter to the bowl. Season with salt and pepper (a few shakes will do, be careful with the pepper though if using a pepper mill.)

Pour mixture into the baking dish. Put the remainder of the butter spaced out on top of the mixture. (I guess that helps it not dry out.)

Bake at 350 for 1 hr. I usually lightly stir it a few times while cooking so that there aren't areas full of cheese or onion. (The picture on the left is without mixing, the picture on the right is after a fix mixes intended to break up the tater tots.) 

Now if you want to take it to the ultimate level, crumble potato chips and sprinkle on top of potatoes when there is 15 minutes left of cooking time. It's great with or without. ENJOY!
