Bruschetta



Bruschetta is the quintessential appetizer for any party and this one is always a crowd pleaser! Instead of tomatoes, this bruschetta is a combination of peppers and onions and seasoned with balsamic vinegar and olive oil.

Ingredients:
  • red bell pepper (1)
  • yellow bell pepper (1)
  • green bell pepper (1)
  • onion (red or white) (1/2)
  • tomato (optional) (1)
  • basil
  • salt and pepper
  • olive oil
  • balsamic vinegar
  • baguette (1, french or sourdough)
Directions:
Rinse and chop up the bell peppers and add to a medium sized bowl.

Chop the onion and add to the bowl. Season with salt and pepper and a few tablespoons of olive oil and balsamic vinegar. Mix well. Cover and refrigerate for at least 30 minutes.

When you are ready to serve your appetizer, remove the bowl from the refrigerator and drain the excess liquid in the bowl.

Slice a baguette and toast the slices. Top with bruschetta.
