Quick Lasagna Rolls


Seeing as I'm way to drained from an exhausting weekend, here's a post that's been sitting in my draft que for a few weeks now. Quick lasagna rolls were a pretty creative and ingenious idea on my part that took less than 30 minutes to prepare. A great idea for a dinner party - perfectly portioned little lasagnas! Its also a great way to get your kids, friends, guests or yourself to eat spinach!

Now since I totally mad this up, I have no ideas the portion amount but if you google lasagna rolls you can find plenty of recipes with exact measurements. And of course any cheese and filling tops will do!

Ingredients:

  • gouda cheese (1 cup) (or any other cheese you have)
  • ricotta (1/2 cup)
  • lasagna noodles (6)
  • tomato sauce
  • frozen spinach (1 cup or more, depending on how much spinach you like)
Normally, lasagna mixtures calls for eggs, but I hardly ever have eggs in my house so I skipped this part - it turns out fine without.

Directions:
Cook the lasagna noodles according to the directions. Meanwhile in a small bowl, mix the ricotta, 1/2 cup of the gouda cheese and spinach in a bowl. Season with a little salt and pepper.


Butter the bottom of a baking dish. Then cover with tomato sauce. Lay out the cooked lasagna noodles in a row and spoon the filling along each noodle (like in the big picture above). Roll up each noodle and filling and set on top of the tomato sauce.


Cover tightly with foil and bake at 450 for 20 minutes. Uncover and bake for another 10 minutes or until the cheese on top is melted and bubbly. Let stand for 5 minutes. Serve with additional tomato sauce if desired.
