Cola-Glazed Pork Chops w/Greens

Here's a dish I made for my mom when she last visited - its an old school favorite with a twist. i thought it was a little strange that I needed cola (i recommend Coke, not Pepsi for this one), but the picture looked good so I went for it. the result = delicious! now you make it and decide for yourself.

Season pork chops with salt, pepper and chinese five-spice powder (once you buy it I swear you will use it time and time again), cook in a skillet (in oil) until browned. After those are done, take them out and add more oil to the skillet, throw in and cook the chopped up mustard greens, some chicken broth (1/2 cup), garlic and salt/pepper. once done, take em out so you can make the best sauce. in the same skillet, whisk in the Coke (1 cup), brown sugar (1/4 cup) and ketchup (1/4 cup) and cook until slightly thickened (ie 4-5 minutes max). Return the pork chops to the sauce so that they are coated with the yummy sauce. and then serve with the greens on the side. (in the picture you'll see the other side was tomatoes - seasoned with salt, pepper and olive oil - a staple in my family during the summer months)

NOTE: i made with bone-in pork chops, not sure it would work the same with boneless. plus if you have a dog who sits under you while cooking, you can throw her/him a bone when everyone is done. it'll make their night!

and p.s. another great recipe from America's Test Kitchen 30-Minute Suppers.
